Crispy Onion Chicken
A Quick Dinner Dish
This is a tried-and-true, quick and easy chicken recipe I've used during times when I needed to get dinner on the table quickly. Working, shopping, appointments, no matter what the reason, there are times a fast meal is needed and this one can be done in 35 minutes or less. As a bonus, the chicken turns out crispy and flavorful without frying, which is a healthier option. The only thing you have to do in the meantime as the chicken bakes, is to begin your side dishes. I usually serve rice or a baked potato, and broccoli, brussels sprouts, or another fresh or frozen vegetable for this quick dinner.
Here's What You Need
1 cup dry breadcrumbs
1 package dry onion soup mix
4 skinless, boneless chicken breasts
1/3 cup mayonnaise
What To Do
Preheat oven to 425 degrees.
Combine breadcrumbs and soup mix in a large
zip-top bag; seal and shake until well mixed.
Brush chicken breasts with mayonnaise.
Put one breast in the bag of dry ingredients.
Seal and shake until the chicken is coated.
Repeat for the remaining 3 breasts.
Arrange chicken on an ungreased baking sheet.
Bake for 20 to 25 minutes or until juices run clear when pierced with a fork.
You might find it handy to have the following things to make this dish: Pastry brush, Non-stick Baking Sheet, Onion Soup Mix and a large plastic bag for breading the chicken. I label my pastry brushes, so that I never use the one I've used for meat for anything else.
